The hub made stuffed peppers last night they were so, so yum! I've always had peppers stuffed with rice, but this recipe called for couscous & it was an excellent way to shake things up a bit. The hub made stuffed peppers last night they were so, so yum! I've always had peppers stuffed with rice, but this recipe called for couscous & it was an excellent way to shake things up a bit. 3 bell peppers
1 garlic & olive oil flavored box of couscous
1 medium onion, chopped
1/3 cup chopped mushrooms
Handful of chopped carrot
Tomato sauce, to taste
Directions: Cook couscous according to directions on the box. Meanwhile, saute onions, carrots, & mushrooms in a bit of olive oil. Cut the lids off of the peppers and set aside. Clean out the inside of the peppers. Preheat oven to 350 degrees & oil the baking dish. Mix the couscous, veggies, & tomato sauce. Scoop the stuffing into the peppers, replace the tops & set in baking dish. Bake for 45-60 minutes, until the tops are brown & have risen a bit (I think we did about 50-55 minutes). Remove the peppers from the oven, allow to cool slightly, & enjoy!
