Spicy Sweet Potato Chips

We tried a new recipe tonight and it was mmm mmm good!
Suffice it to say, I ate waaay too many sweet potatoes tonight...

2 tbs. olive oil
2 tbs. maple syrup
1/4 tsp. cayenne pepper (I used chili powder)
3 large sweet potatoes (cut into 1/4-inch slices)
Salt & pepper to taste
Directions: Preheat oven to 450 degrees. Spray a baking sheet with cooking spray. Stir together olive oil, maple syrup, and cayenne pepper in a small bowl. Brush the sweet potato slices with the maple mixture and place onto the prepared baking sheet. Sprinkle with salt and pepper to taste. Bake in preheated oven for 10 minutes, then turn the potato slices over and brush with any remaining maple mixture. Continue baking until tender in the middle and crispy on the edges, about 10 minutes more. Keep an eye on them though because they can burn quickly. Suuuper yum! :)
