Buffalo Tofu

First of all...
Yum.
Seriously, yum.

The hub whipped up some tofu tonight. After cooking it, he tossed it in some buffalo sauce & we ate it with some celery & ranch. I know that you probably think I'm exaggerating, but it tasted pretty darn close to chicken. Mmmm!

Stuffed Peppers

One of the best feelings ever = coming home to your apartment building smelling awesome & following the aroma right to your own door. :)
The hub made stuffed peppers last night they were so, so yum! I've always had peppers stuffed with rice, but this recipe called for couscous & it was an excellent way to shake things up a bit. The hub altered the recipe a bit & his changes are reflected below. For the original recipe, click the link!
3 bell peppers
1 garlic & olive oil flavored box of couscous
1 medium onion, chopped
1/3 cup chopped mushrooms
Handful of chopped carrot
Tomato sauce, to taste
Directions: Cook couscous according to directions on the box. Meanwhile, saute onions, carrots, & mushrooms in a bit of olive oil. Cut the lids off of the peppers and set aside. Clean out the inside of the peppers. Preheat oven to 350 degrees & oil the baking dish. Mix the couscous, veggies, & tomato sauce. Scoop the stuffing into the peppers, replace the tops & set in baking dish. Bake for 45-60 minutes, until the tops are brown & have risen a bit (I think we did about 50-55 minutes). Remove the peppers from the oven, allow to cool slightly, & enjoy!

A Silent Auction

The hub & I headed up the silent auction at a benefit for a dear friend of ours this weekend that went off without a hitch! We also added a few handmade goodies to the homemade table to sell...

 The auction items (people were so stinkin' generous!).

I put up a few yarn wreaths.

And we put out our album art pieces.
I also sold a few mini earring organizers.

All in all, it was a great success & it was so nice to see some of our craft projects bring in donations for a great cause. :)

Sloppy Joes

We gave these 'snobby joes' a try tonight & they were so yum!

They were a little more time consuming than most of the recipes that I try, but they were perfect for a lazy Sunday afternoon with nothing to do & we probably had two more meals worth of leftovers. :) I cut down the chili powder to 2 tablespoons, but that's the only change I made. We had it on toasted bread topped with a bit of yellow mustard. Mmmm!

Happy New Year!

Happy New Year, friends!
(One of...) My resolution is to craft more with what I already have. No new supplies, just working with what I already have in my stash to make fun things. We'll see how it goes...

The hub & I kicked off the new year with a simple, super good breakfast.

We made avocado toast.
Mmmm...
So easy.
So yum.
